PHS Culinary and Baking Students: Volunteer for the Catalyst Event
Overall Summary of Event for Participants:
The Marketing and Events Coordinator for Downtown Green Bay and Olde Main Street has asked Pulaski High School culinary and baking students to work with chefs during the event and keep the food at its finest. The chefs are from Three Three Five, Hinterland, and Black & Tan.
Location: Watermark Building 119 N. Pine St. Green Bay, WI

Whipping Up Wellness
Culinary Arts 2 students planned and prepared cookie recipes that met national nutritional standards:
Collaborating with Ms. Mathiessen (Pulaski Community School District Food Service Director), students followed the standards in developing their recipes and then preparing samples for students to try.
General Standards:
Must meet one of the following:
- Be a whole grain-rich product (at least 50% whole grain by weight or 1st ingredient listed)
- Have a fruit, vegetable, dairy product, or protein food as the first ingredient
- Be a combination food that contains at least ¼ c fruit
- Contain 10% daily value of calcium, potassium, vitamin D, or dietary fiber
Nutrient Standards
Must meet ALL of the following:
- Calories are less than 200 calories
- Fat:
- Less than 35% of calories from fat
- Exemptions: Nuts, seeds, nut/seed butters, dried fruit with nuts or seeds (with no added nutritive sweeteners or fat)
- Less than 10% of total calories from saturated fat
- Exemptions: Nuts, seeds, nut/seed butters, dried fruit with nuts or seeds (with no added nutritive sweeteners or fat)
- 0 g trans fats
- Sodium:
- Less than 200 mg
- Sugar:
- Less than 35% of weight from total sugar

Green Bay Restaurant Week Kick-Off Event a Success!!!
What is Restaurant Week?
Green Bay Restaurant Week allows everyone to experience great food and prices that delight your palate and your wallet. This culinary event featured discounted prix fixe menus from 70 area restaurants. Food lovers simply dined out at as many participating restaurants as they liked during Greater Green Bay Restaurant Week July 9-16.
Restaurant Week Kick-Off Event
As an added bonus this year, the event partners graciously created a kick-off event to benefit the two largest high school culinary programs in the area, Pulaski and Preble High Schools. All food and facilities were donated to the event and all proceeds from ticket sales were donated to the two high school ProStart programs.
As a friendly competition, each school will have 5 teams of 3 students planning and preparing 2 hors d'oeuvres, 1 hot and 1 cold, totaling 20 different appetizers for event visitors to sample and choose their favorite for the People's Choice Award!
Results:
The event was a HUGE SUCCESS! Ticket sales were phenomenal and the schools were only 8 tickets apart! Because of Preble's teacher, Laurie Spence, the ticket sales were split evenly.
The Wisconsin Restaurant Association Brown County Chapter donated an additional $1000 to each school's program!
I am just so tremendously grateful for Pulaski's program to be included for this event. It was a new and exciting challenge/opportunity that my students are already plotting for future years (I don't know who they get that competitive spirit from
).

ProStart students tour Shawano Businesses
Six ProStart students had the privilege to attend the NTWC business tour, featuring 3 Shawano businesses, all owned and operated by successful women entrepreneurs-The Farm Inn (Kelly Baumann), ANEW (Cindy Van Belkom) and Body Essentials (Kathy Hansen). Students learned about starting and owning your own business, leadership as well as the retail and food industries. Thank you Kathy, Cindy and Kelly for the great tour and for sharing your business insights with our local high school students. Thursday, April 9, 2015

ProStart Invitational 2015
Both ProStart teams had awesome performances and represented Pulaski extremely well at the Wisconsin ProStart Invitational. Our high school management team took second place in the state with their made-to-order pierogi concept. It's always great to show off our Polish pride, especially in our food; perhaps one day we'll open this restaurant here in Pulaski :). Please congratulate Grant Bachman, Bailey Baron, and Morgan VandenLangenberg on their 2nd place win and each receiving over $28,000 scholarships to culinary schools across the country!

Our culinary team also did an amazing job, with judge comments including having the best poached fruit in the competition, as well as outstanding teamwork & communication. Please congratulate Emma Bestul, Emilee Hendricks, Natalie Nickerson, and Destiny Prendiville on a great performance.

Pulaski High School ProStart students joined FOX 11’s Pauleen Le in the kitchen as Saturday’s Cooking with You guests.The students shared delicious recipes for Caramel Apple Pierogies and Sautéed Scallops with a Wine Mustard Sauce.
