Advanced Foods students put their pastry skills to the test preparing apple turnovers. This is always the best grading I ever have to do ;)

Culinary Arts 1 students learned how to prepare Schaum Torte (baked meringue) and Strawberry Coulis (coo-lee)... a fancy way of saying strawberry sauce without the seeds. But to have the dessert isn't enough- we need to play with garnishing!!! 
exam was preparing lemon meringue pie to demonstrate shortcrust, custard, and meringue techniques. Who knew an exam could be so sweet?!
Mindy Gohr, pastry chef at Bittersweet Pastry in Chicago and 2004 graduate of Pulaski High School, began assembling a wedding cake for the Culinary Arts 2 students. Students were able to see how Styrofoam forms can be used in cake construction, as well as see Mindy's work with buttercream and fondant in the assembly process.
